請問包子的麵團怎麼做？一定要老麵嗎？

在網路上搜尋了，
大部份都要加老麵。

我是新手，
而且一般小家庭也不會每天做包子。
哪來的老麵？？

可以有人提供自己的做法嗎？
不要加老麵的，
而且對新手來說不失敗的傻瓜配方食譜。
（餡料不用了，我需要的是麵皮）

如果我真從中得到成就感，
也會想要常常做的。
所以，可否順道解說一下老麵怎麼做？
可以冰冷凍需要時再拿出來嗎？
