明蝦沙拉

材　料：

明蝦　1人1條
三色豆　1/2杯
高麗菜絲　4大匙
熟蛋黃　2個
沙拉醬　3大匙

做法：

1.明蝦挑去腸泥，切下蝦頭，用竹籤將蝦身串起，把蝦頭及蝦身都放入滾水中煮熟，蝦頭取出備用，蝦身等涼後剝去蝦殼，並把竹籤取出，全部的明蝦都處理好備用。
2.將三色豆用滾水燙熟，撈起瀝乾水份，加入沙拉醬拌勻後，舖在盤中備用。
3.再撒上高麗菜絲，把蛋黃切成末後，撒在高麗菜絲上。
4.把明蝦排入，蝦頭立起，在明蝦上擠上適量的沙拉醬即可。
