阿基師:餐飲業者的道德良心比廚藝更重要

【蔡明樺/台北報導】名廚「阿基師」鄭衍基今出席全國食品衛生志工大隊成立大會,身為福容大飯店行政主廚的他坦言,對食品安全的要求很「龜毛」,飯店向任何廠商進貨一定要附上檢驗合格證明,客人用完餐後,他會要求員工採集菜餚檢體,立刻送衛生局檢驗。他強調,餐飲業者的道德良心比廚藝更重要,若食安把關不周導致客人吃壞肚子,他絕不以「飯店也是受害者」來卸責。

阿基師說,飯店廚房裡冷藏的食材,只要冰超過4天,即使食材還沒腐敗,也不能端上桌給客人吃,全部變成員工伙食。很多食品業者看上阿基師的高人氣,捧著現金要他廣告代言,阿基師說,代言前一定先要求廠商附上產品的檢驗證明,再請法務人員確認無誤後,才放心推薦給民眾食用,「這是身為廚師基本的職業道德。」
